Bramble madeleines

Hot and fresh out the kitchen

Totally delighted with the results of this recipe. It takes minutes to make, uses foraged brambles (which I’m always looking for a use for), and tastes unbelievably professional. You could literally knock them up if you’d run out of biscuits and had friends coming round and it would look super impressive and result in virtually no dishes or mess. Plus they smell amazing.

Here’s what to do:

• Grease your madeleine moulds and set the oven to 180C (fan)

• Melt 100g of butter

• Whisk together 100g caster sugar and 2 eggs until light and fluffy

• Stir 100g of plain flour, 1tsp of baking powder, ½ tsp of vanilla extract and the (slightly cooled) melted butter into the butter and sugar

• Pour the mixture into the moulds and press a bramble into the fattest part of each

• Cook for 8 minutes then check to make sure they’re risen and evenly coloured

• Eat warm!
